It was with this in mind that the owner, Mr. Masahiko Nogiri, founded Sushi no Kiri.
It goes without saying that sushi is delicious when it is made with fresh fish.
At Sushi no Kiri, we bring out the best in sushi by combining the traditional techniques of Edo-mae sushi with the variety of cooking methods .

Carefully selected seasonal ingredients from all over Japan
The fishing grounds of Oita Prefecture are divided into northern Oita, Beppu Bay, and southern Oita, all of which have different ocean currents and water temperatures, but are similarly characterized by an abundance of fish. Sushi no Kiri takes advantage of this blessed geography to procure local ingredients and quality fish from all over the country in order to serve them to our customers in their most delicious state.

We offer three select “Omakase” courses.
The contents of each course and the order in which they are served change daily depending on the ingredients procured from the market on that day in that season.
Sushi and other main dishes are served alternately so that you can enjoy a good balance of sushi and other delicacies at the same time.

Sushi no Kiri was born out of the desire to "share the thrilling experience of sushi with as many people as possible.
Simply cutting and serving fresh fish is not enough to impress our customers.
After much thought, I decided to offer "Modern Edomae Sushi," which is a fusion of Edomae Sushi and techniques from a variety of culinary skills.
I have acquired solid skills and knowledge in my 25-year career as a sushi chef.
Sushi no Kiri's sushi is created by combining the best ingredients from Oita and other regions of Japan.
Our three “Omakase” courses are prepared to bring out the best flavor of the ingredients.
It is not only the taste of the food that we focus on.
In the restaurant as well, we pay attention to every color, sound, shape, and movement to create a space where you can experience the sushi of "Sushi no Kiri.
The restaurant has only 8 seats at the counter so that customers can spend their time without worrying about the time they have to spend.
Please enjoy a supreme sushi experience in the best environment.
